1.  Not going to work, or dressing for work, or doing my hair – it’s an up-do today!

2.  The ice outside and me inside

3.  Eating breakfast at home instead of at my desk

4.  Not hearing, “Mom, I need jeans!”

5.  And in lieu of that, getting caught up on laundry (a little more of a love/hate relationship)

6.  Finally having time to make homemade pizza!  See it here!  My kids are so excited!


7.  Having some reading time – it takes me months to get through a book

8.  Spending some time with my two babies that aren’t such babies anymore

9.  And doing a bunch of nothing in between


This recipe makes a truly amazing pizza that the whole family will love.  The kids love to help with the dough and toppings so it’s something you can do together.

Let’s start with the crust.  You’ll need:

1 package Active Dry Yeast

1 cup warm water

1-1/2 cups whole wheat pastry flour (or you can grind your own using wheat berries available at any health food store).  Of course, you are welcome to use all white flour too.

2 good squeezes of Agave Nectar or 2 tsp of sugar

1/2 tsp sea salt

2 Tbsp Olive Oil

1-1/2 cups white flour

Dissolve yeast in warm water.  Let rest for 5 minutes. Stir in wheat flour, agave, salt, oil and 1 cup white flour.  Turn out on a clean surface and get ready to get your hands dirty.  Or better yet, let your kids help.  They love to get dirty and make messes!

Knead in the last 1/2 cup of white flour gradually.  It should look soft and pliable when you’re done.

And when your kids help it could look like this:

Coat your bowl with Olive Oil (the same one you used before, no need to dirty another one) and put your dough ball in.  Turn to coat and cover.  Let your dough rise in a warm place for about an hour.  Sometimes I like to turn my oven on warm for about 30 seconds, then turn it off and set the bowl inside.

This is the perfect time to shred your mozzarella and fry your sausage!

Preheat your oven to 350 degrees.  Grease two cookie sheets.  Separate the dough into two balls.  Roll one ball out on each cookie sheet. Turn up edges slightly and add your desired toppings.


Cook until cheese is melted and crust is brown, about 15 minutes.

For a calzone only add toppings to one side of your crust.  Fold over and use a fork to seal the edges.  Glaze with milk and sprinkle with parmesan cheese.  Cook just like a pizza.


One of my favorite songs is Need You Now by Plumb and the chorus goes like so:

There was a time not long ago that I was feeling down, depressed and a little worried.  Okay, a lot worried.  This song played over and over in my head and I sang it to God through tears so many times I couldn’t count.

On my way home from church this evening, this song came on the radio and I was reminded of pouring my heart out to my Father through this song.  The funny thing was, I couldn’t remember why.  What had I been so worried about?

Now, as I’m writing this post, I remember what it was, but it took me awhile to think of it.  Not because I’m getting old, I’m sure!  But because my God is bigger than anything I could possibly go through.  I clung to Him and He delivered me from my worry!

I encourage you to cling to Him!  The chorus to this song is so powerful.  Use it as a prayer, say it (or sing it) earnestly to Him and see how He moves.  I love when my children come to me.  How much more does God love it when we come to Him?
