I don’t really like avacados, but mixed with all these other ingredients they aren’t too bad.  With all the health benefits they carry, I needed to find a way to like them.  What better than a great guacamole?  It’s an excellent party food and easy to take along to any get together or just enjoy with your family.

Avacados are full of heart-healthy monounsaturated fat. They are also high in protein, potassium, magnesium, folic acid, B vitamins, vitamin E and vitamin K.  Don’t let those store bought, pre-packaged guacs fool you.  They almost never have anything to do with a real avacado.  Read your labels!

Ingredients:

2 ripe avacados
1 clove garlic
1/2 teaspoon sea salt (I use Celtic Sea Salt from my local health food store)
1 Tablespoon fresh squeezed lemon juice
1/4 cup onion
1 Roma tomato

Directions:

Put all ingredients in a food processor and chop until desired consistency, chop by hand or if using a VitaMix machine, select variable speed #1 and quickly increase speed to #5. Process for 15-20 seconds.

Makes approximately 2 cups

Enjoy by itself, with my Homemade Salsa recipe and tortilla chips or on a whole wheat flour tortilla.
