Fresh homemade salsa is the perfect dish. This salsa recipe is one that I’ve created myself.  If you like your salsa hotter you can always add more peppers!


3 fresh Roma tomatoes
1/4 – 1/2 medium onion
1/2 seeded jalapeno pepper
1 clove garlic
1 teaspoon lemon or lime juice (fresh squeezed is always best)
1/4 cup fresh cilantro leaves
1/2 teaspoon sea salt


Put all ingredients in a food processor and chop until desired consistency.  If using a VitaMix machine, select variable speed #1 and quickly increase speed to #5. Process for 3-5 seconds.

Or if you have a food chopper, you can chop all your ingredients separately and then stir them together in a bowl.

Makes approximately 2 cups
